Oven Crispy Fries

Made these Oven Crispy Fries today, which I happened to see on an “Essence of Emeril” episode. They turned out quite good.

Despite his overexposure and insipid audience shows, he’s still got skill, which is why I like the “Essence of…” show — it’s just him, one on one with the camera.
